Weekend Breakfast – Eggs

Happy belated Veteran’s Day! I’m enjoying a 3 day weekend and am excited to share this breakfast recipe with you guys. Saturday and Sunday mornings are meant to be lazy, and I love making breakfast on my days off.

I love eggs in the morning because they keep me full and they are full of protein. I know eggs are usually linked to cholesterol, but I am not sure why that myth has spread world-wide. Eggs ARE full of cholesterol, true. However, it’s the “good” kind. What do I mean by that? There are two classes of cholesterol: LDL and HDL.

LDL: Also called the bad kind of cholesterol because it allows the body to build plaque in the arteries and clog them, which can lead to heart disease.

HDL: Also called the good kind of cholesterol because it removes LDL.

Guess which one eggs have? 🙂

This recipe is so simple, that I was considering not posting it. But, I figured that some people haven’t thought of this combination yet and I wanted to share!



Makes 1 serving

2 eggs

1 tbsp oil

3 tbsp mild salsa

1 avocado

A note about the list: yes that’s it! It’s that simple – just 3 ingredients. Adding one whole avocado to two eggs might seem like a lot, but avocado is extremely good for you and I encourage you to eat it more because it’s full of really good fats. Good fats differ from “bad” fats because they go straight to important parts of the body like the brain and nervous system and cushion those barriers. In contrast, bad fat accumulates in your gut, clogs arteries, and accelerates weight gain. Also, the salsa I used is my favorite store-bought brand because there aren’t any ingredients in it that I can’t pronounce and there’s no sugar. That’s usually a good rule of thumb when shopping for healthy food.


1) Heat pan on medium-high heat and add the oil.

2) Crack two eggs and wait 4-6 minutes to cook thoroughly. Adjust cooking time to your liking. I love eggs cooked all the way through with just a little bit of yolk left runny.

3) If your eggs are burning, yet the yolk isn’t cooking quickly enough for your taste, cover your pan with a lid and let the steam cook the top of the egg.

4) Plate your eggs, top with avocado, and smother with salsa!
